Our Team

About the Owner

Loan’s food career started during COVID, when she hosted a series of vegan banh mi popups out of her kitchen in West Philly . She craved the childhood dishes she was nostalgic for since transitioning to a plant-based diet. She’s enjoyed learning more about her cultural identity, using food as a form of self-exploration. She draws on her experience as a traveler and working at at a grocery store and volunteering at farms. She oversees recipe development, cooking classes, daily operations and ensuring that everything is fun and original. You can follow her @Save_the_lastbite

She is one of the pop-up vendors at FDR Park’s Southeast Asian Market in Philadelphia. Check the calendar of events and visit us there.

Our Family Operation

Vitaliy

Vitaliy has worn many hats but has a knack for developing systems to ensure a positive customer experience. He has worked on a food truck, in an Italian kitchen and at a food convenience store. He is usually seen helping cut and prepare vegetables, making smoothies or sharpening knives. His cultural heritage is Ukranian and his favorite ingredients are buckwheat, beets, and brodinksy (dark rye bread). He’s been on the plant based journey with Loan since 2020.

Anh

She is an elder advisor and plays a crucial role in recipe development and ensuring respect for traditional Vietnamese cooking techniques. She has wealth of expertise in Vietnamese cuisine, especially knowledge of growing and cooking with common Vietnamese ingredients. She practices veganism twice a week for health and spiritual related reasons. Her specialties are desserts, spring rolls, and banh xeo, a Vietnamese filled crepe.

Son

Son is our event and operation consultant. He specializes in event planning and executing memorable events for Save the Last Bite. From intimate gatherings to large celebrations, Son works collaboratively to customize efficient menus and coordinate every detail, making sure that each event is a success. In the past, he has dabbled with plant based eating for health reasons.
